These conditions create a deep concentration berry notes, dark color and supple tannin. The process of wine production Syrah begins with a gentle separation of the berries from the combs, then they are very gently pressed to preserve the best of fruit, flavor and moderate tannins. After that, the must wine yeast is added and it is fermented in closed stainless steel vats. During the day, the wine is stirred three times to the skin is completely separated from the pulp. The area Oakley located in U.S. district contra Costa in the second half of the XIX century was considered a fairly prosperous farming community with a total area of a thousand acres with magnificent gardens and superb vineyards. Here he acquired, preserved and restored many ancient vineyards. In 1991, Fred along with his wife Nancy decided to make significant changes in their business and moved the winery to the area of the Carneros region of SONOMA County, in a historic estate with 350 acres of new vineyards, where there were more favorable conditions for growing grapes. Although a large part of the Carneros region that distinguish the cool climate, grow varieties such as Pinot Noir, Chardonnay and Merlot, Fred decided to start growing native Rhone varieties: Roussanne, Shiraz, Marsanne and Viognier.
