A blend of red wine "Caspagnolo" consists of the dominant grape variety Sangiovese and a small part of Merlot grown on the plot in the commune of Monteriggioni in the famous region of Chianti Colli Senesi. The soils of the vineyard, located at an altitude of 200 meters above sea level, consist mainly of marl. The exposition area — South-West age of vines is 20 years. Harvest harvested by hand in the first week of October into small boxes. Fermentation and maceration take place in stainless steel tanks at a temperature of from 20 to 30°C for 10-12 days with regular manual immersion of the cap and the pneumatic pumping of the wort. Then the wine is aged briefly in first in Slavonian oak barrels and after bottling in bottles for about 3-4 months. Annually produces 60 million bottles of wine "Kaspanolo." The wine has good storage capacity — over 10 years.The farm "Villa Poggio Salvi" belonging to the home wine Biondi Santi, seeks to preserve the traditional quality wines of Brunello. Vineyards located in Montalcino at an altitude of 300-500 meters above sea level and Casavecchia at an altitude of 200 meters above sea level. In the vineyards in Montalcino, with a total area of 23 hectares, mainly grown Sangiovese Grosso and 20 hectares in Casavecchia planted Sangiovese and Merlot. In agriculture much attention is paid to production technologies and equipment of the winery: built ultra-modern cellar, one of the branches which entirely given to the plant for fermentation of wine, used automatic conveyor, the wines are aged in high quality oak barrels. The estate "Villa Poggio Salvi" seeks to maintain and improve the quality of the wines, and thanks to modern technologies used in agriculture, these wines become more affordable.
