"Baccante" — a refreshing, well-balanced wine with a dense structure and a pleasant taste. With personality, this wine can satisfy the most demanding customers. To taste "Baccante" means to personally touch the winemaking traditions of the Sicilian lands. This is a typical Sicilian wine made from the grape varieties Chardonnay and Grillo grown in vineyards located near the town of Madonna, on sandy and clay soils. The vineyards are located amphitheater on the Northern slope, at an altitude of about 400 meters above sea level. Planting density is 4000 vines per hectare. The classic Mediterranean climate of this region is ideal for growing vines.The grapes for "Bacchante" harvested by hand early in the morning in August. Grapes is fairly short maceration at low temperatures, so that the wine acquires its color, aroma and taste. The fermentation process of only natural yeast is produced at a temperature of 16-18°C. the wine is aged First in stainless steel tanks for three to five months, and then "Baccante" spends a few months in the bottle.Abbazia Santa Anastasia was founded in 1100 by count Roger d'altavilla, becoming a center of cultural life and working life in Sicily. This land was cultivated grapes, wheat, olive and fruit trees, but the land proved to be particularly suitable for growing grapes.
