Chateau Cos Labory, 2007 — a pleasant, fairly complex fruity wine with supple tannins. The wine is made from a blend of selected grapes of Cabernet Sauvignon, Merlot and Cabernet franc, grown in the vineyard of Chateau Cos Labory of the commune of Saint-Estephe. The soil consists of a layer of gravel and clay, which gives the wine power and a lovely structure of tannins, and makes this wine from the mass wines of Bordeaux. The average age of the vines is 37 years. The grapes are harvested at full maturity degree and is carefully sorted. The wine is aged 18 months in oak barrels, of which 30-50% are new. The wine should be consumed in the period from 2013 to 2025. The vineyard of château labory is a member of the Academy du Vin de Bordeaux. KOs from the name of the caux area, indicating a rocky hill, and Laborie is the name of the castle during the period from 1800 to 1840. The owners of the castle changed several times, today it belongs to the family Audoy (Odua). Near the castle is the castle cos d'esturnel. The vineyard covers an area of 18 hectares, is located on the flat top of the hill. Here, on clay-limestone and gravel soils, are grown the traditional médoc grape varieties — Cabernet Sauvignon, Merlot and Petit Verdot. Yields of 25-year-old vines is 45 hectoliters per 1 hectare. Hugh Johnson writes: "the Wine sector convey a distinct bright taste of St. Estephe and become relatively soft and fruity at the age of 4-5 years."
The wine is crimson-purple.
The enticing aroma of the wine reveals notes of ripe dark fruit, vanilla, oak, chocolate, underbrush and black cherries.
The wine has a smooth, voluptuous palate with hints of plum, black currant, chocolate, coffee and toasted oak, supported by flexible tannins.
The wine is perfect with game, red meat (beef, lamb) and cheese.
