The grapes for "Casanuova di Nittardi" Chianti Classico is grown in the Chianti region at an altitude of 450 meters above sea level in the so-called Golden triangle between San Donato, Panzano and Castellina. The density of 3000-5500 vines per hectare, yield 43 hectoliters per hectare. Collected and carefully sorted grapes are sent to fermentation in 10.5-ton stainless steel tanks for 8 days at a temperature of 24-28 °C. After fermentation, the wine is aged 6 months in French oak barrels and then another few months in bottle. Wine storage capacity is large enough and can reach 20 years.The bottle is decorated with the image of a black rooster (Gallo Nero) — the emblem of the Association of producers of Chianti Classico. In addition to the annual production of wine with a traditional label, produced a limited number of bottles with labels created by famous artists. This tradition began in 1981. There he wrote that he sent several bottles of Nittardi to Rome as a "genuine gift to the Pope", or rather, the Popes: Julius II and Leo X. Since 1982 the company "Fattoria Nittardi" belongs to the Frankfurt publisher and art gallery owner Peter Femfert and his wife Stefania, a historian from Venice. Fattoria Nittardi owns 12 hectares of vineyards, 4 hectares of olive groves and 120 acres of pristine forest. The vines are planted in Nittardi in the heart of Chianti Classico, at the height of 450 meters above sea level, on the South side of the hills. These hills are covered with oak trees that provide protection from cold winds.
