The wine Domaine Jean Defaix, Chablis Premier Cru "Les Lys" is made from grapes of Chardonnay, 55-year-old vines which are grown on clay-chalky soils of the appellation of Chablis. This wine has elegant fruit flavors with pronounced notes of minerals and the classic character of Chablis. Vinification in stainless steel tanks and aging on the lees ("Les Lys") allow you to retain the sensual aroma and the unique taste of the grapes, giving it the future of wine. From harvest to bottling, the wine making process is strictly controlled, providing a great result and good quality of Chablis premiers CRUs "Les Lee." The wine has excellent potential to develop over the next 15 years not just retain its taste, but also will increase its range and richness.

The wine colour — pale straw with Golden-greenish reflections.
The wine has a refreshing, slightly spicy aroma with hints of flowers and mineral veil.

About the manufacturer

Продолжая 150-летнюю семейную традицию два винодела — Даниель Дампт и его свекр Жан Дефе объединились в общий Домен Daniel Dampt & Fils. Хозяйство насчитывает 30 гектаров виноградников, среди которых 16 га отданы для будущих Шабли и 14 — под Шабли Премьер Крю (в основном это Вайон, Фуршаме, Кот де Леше). Винодельня оснащена резервуарами из нержавеющей стали. Приобретение нового современного оборудования позволило хозяйству увеличить объемы производства, таким образом ежегодно компания выпускает около 150 000 бутылок. Страсть к виноделию передалась и детям нынешних руководителей — Винсент и Себастьян Дампт работают вместе с родителями, а после получения практических навыков и постижения секретов виноделия в Новой Зеландии и Австралии, в 2008 году они решили основать собственный домен, тем самым решив расширить имеющийся ассортимент вин семейного производства.
