A little over 10 years ago Dominique Piron bought a vineyard Chenas at the Lameloise family, which owns the eponymous famous Burgundian restaurant, with the award of 3 stars in the guide Michelin. The name of the wine Piron added the word "Quartz", wanting to point out a significant amount of this mineral in soils of the vineyard, giving a bright minerality drink. The plot of 9 hectares is located on a very steep slope with East exposure at an altitude of 310-380 meters above sea level. After manual harvest, the grapes are subjected to carbonic maceration, followed by a regular pizhazhem (punching of the cap pulp) for 18-20 days for more integration of tannins. 30% of the must is aged in oak barrels to give the wine Chenas "Quartz" roundness and elegance.
The wine is a deep garnet cherry color.
The wine shows generous, pleasant aroma reveals notes of dark fruit, plums, cherries, blackberries, flowers, violets and peony.
The wine shows a complex, deep flavor with notes of raspberry and Cassis, with fine-grained tannins and a long finish with light spicy nuances.
The wine goes well with elaborate dishes with sauces, grilled meat, meat stews.
