"Santo Spirito" is made from local grapes — nerello Mascalese and nerello Cappuccio. The vineyards are located in the Northern slopes of mount Etna, at an altitude of 700-750 meters above the sea level. Soft, dark volcanic soil, rich in ash, give the wine softness, roundness and sensuality. The age of the vines is 40 to 100 years. Harvesting is usually carried out in the second week of October. The berries are fermented at a controlled temperature (28-30°C). The wine is aged in barriques for 16-18 months and 1 month in stainless steel vats, then bottled.Tenuta delle Terre Nere, whose name in Italian means "black land" traces its history to the beginning of 2000-ies. The owner of the wine sector is Marco di Grazia. He was one of the first who dared to resume the cultivation of grapes on the fertile lands located on the territories adjacent to the famous mount Etna. In 2002, Tenuta delle Terre Nera released its first products under the bold slogan "Burgundy of the Mediterranean". Wine produced by Marco di Grazia, bright flavors and refined elegance, typical of Burgundy wines. Tenuta delle Terre Nere uses classic winemaking techniques. Grapes are grown using organic fertilizers, and in 2010, the company received the certificate of organic wine.
