Chateau Filhot wine is made from grapes grown to the South of the village of Sauternes on South-Western slopes. Harvested manually, the grapes are carefully selected. Each variety is fermented separately in small stainless steel vats with temperature control. After a light filtration grades are mixed, the resulting mixture settles 14 months, then placed in barrels of French oak Allier and steel tanks where it is aged for 24-30 months. Chateau Filhot was purchased in 1709 by Romain de Philo rich of the parliamentary Advisor from Bordeaux. It is unknown who was the owner of the castle before, but it is known that vineyards were planted here around 1650. Philo family owned Chateau about a hundred years, after which he repeatedly changed hands, alternating between periods of prosperity and decline. Remained unchanged only the name obtained in the XVIII century. In the 70-ies of the last century the owner of the Chateau in Philo became Henri de Vaucelles and his son Gabriel. They took responsibility for the revival of the Chateau and spent enormous work on its restoration. The work concerned both the vineyards and cellars, which was acquired new and modern equipment. Today the vineyard has recovered, with an area of Sauternes is 62 hectares. The vines are concentrated in several areas North-West of the castle. Soil composed of sand, gravel, clay and underlying limestone.
The wine is bright yellow in color.
The aroma of wine is dominated by delicious, sweet fruit tones (pineapple, tangerine, passion fruit) and a hint of fresh almonds.
The taste of wine is fresh and well balanced, not super rich or complex, but very pleasant, with a long sweet finish.
Wine is an excellent aperitif and digestif. Perfect with foie Gras and Roquefort cheese, Turkey, chicken with sweet sauce, dishes of freshwater fish, asparagus and cream sauce, melon and delicious desserts.
