"The essence (Esszencia)" is a legendary, luxury wine, during the reign of Catherine the great, has been called "liquid gold". Wine is the rarest and the sweetest in the world. Since 1947 in the current three times the harvest in quality and quantity to meet the requirements for the production of "Esszencia", because to craft it you need berries extra class in large quantities. To create a bottle "Esszencia" 100 ml will require a yield per hectare, and for the production of a liter of wine — 3-4 tons of grapes, which corresponds to the yield harvested from 10 hectares. In contrast to the "Aszu", where the berries added to wine, "Esszencia" is the result of natural leakage of juice from the berries "Aszu" — botrytised zaizyumlennogo grapes, that is, dried grapes, processed noble Botrytis.
