This term means the wine was matured on the lees and bottled in a special way. At the end of alcoholic fermentation, the dead yeast fall to the bottom and form sediment, which is the wine. The wine is aged on the lees until bottling (usually in March) and is bottled directly from the fermentation tank that requires skill, because filtering is possible, but not one particle of the precipitate must not fall into the bottle.
