Delicious wine Chablis Premier CRU AOC Bor is created from a crop of thirty Chardonnay vines, grown in vineyards of South-Eastern exposure of the communes of Beine, Poinchy and Chablis which are located on the left Bank of the river serein. Grape harvest is made by hand at the peak of ripeness, and then the berries are carefully sorted and gently pressed. Before fermentation, the grape juice settles for 12 to 20 hours at a low temperature and then moved into small oak barrels, where the fermentation and malolactic fermentation. The period of wine aging on lees for 20 months, and the time the wine spends in neutral vessels, and the other part in small French oak barrels. This technology allows you to keep all the delicious flavors and aromas of Chardonnay, mitigate its minerality and make a bouquet of the wine more complex. La Chablisienne traces its history back to 1923. That year, several winemakers decided to join forces to survive in the economic crisis. Today the company has about 300 households and owns 25% of the vineyards in Chablis, world-famous high-quality white wines. All the wines of La Chablisienne produced from Chardonnay grapes, which, thanks to the unique limestone soils of Chablis gets delicious fruit flavors and a rich variety of mineral colors. Every year the company produces about 30 different wines that have a strong personality. While great attention is paid to tillage and the cultivation of vines and biodynamic methods are used the minimum amount of fertilizer. In turn, careful selection of the vines Chardonnay and the "green fee" to be held several times during the season allows us to achieve a high quality crop and helps the terroir to be fully displayed even in bad years. The company does not have a systematic approach to the production of wine, so each of them is created by our own technology, and the main criterion of evaluation is the systematic analysis of raw materials and tasting wine in the vinification process.Depending on which region of Chablis the grapes are grown, the wines are not only taste and aroma, but also potential exposure. In Petit-Chablis are wines that can develop from 1 year to 5 years, whereas the wines of Chablis premiers CRUs and Chablis Grands CRUs reach true maturity in 5-10 years.

The aroma of wine is dominated by notes of citrus, white fruits and flowers.
The taste of the wine is generous, energetic, fresh, with excellent balance and a full, rich taste which reveals notes of citrus and white fruit, interwoven with hints of minerals.
The wine goes well with cold fish appetizers, soft cheeses and shellfish, fish and poultry with creamy spicy sauce.
