Grape harvest is made by hand at the peak of ripeness, and then the berries are carefully sorted and gently pressed. Before fermentation, the grape juice settles for 12 to 20 hours, then poured into stainless steel tanks, where it undergoes primary (alcoholic) fermentation, and then in oak barriques, where the secondary (malolactic) fermentation. Term aging of wine is 12 months, and the time the wine spends in neutral vessels, and the other part in small French oak barrels.
