Wine "Vigia" from Serafini e Vidotto is the so-called second wine industry, its name translates as "the perfection of the earth." The wine is a blend of three superior varieties of grapes — Merlot, Cabernet Sauvignon and Cabernet franc. The wine is produced since 1994. The vineyards, which are harvested, are the southern and South-Eastern exposure and is located on an altitude of 100-200 meters above sea level, on mountainous, rocky soil. The age of the vines varies from 8 to 35 years. Vintage Merlot is harvested in late September and Cabernet in mid-October. The fermentation process is carried out in stainless steel vats, temperature controlled. The duration of fermentation and maceration from 8 to 10 days, followed by malolactic fermentation process, 12-15 month aging in oak barrels (barriques secondary use of 225 liters) and aging in the bottle directly for a period of 10 to 12 months. The average annual production is quite large — about 40-50 thousand bottles of wine.
The wine has a deep ruby red color.
Expressive, elegant aroma of wine filled with notes of plum, currant, cherry, licorice, underbrush and spices.
The wine shows a rich, rounded palate with hints of ripe dark fruit and berries, with soft tannins and a long, seductive finish.
Wine is perfect for dishes of juicy red meat, Turkey sauce, aged dairy cheeses, veal cutlets.
