Red wine "Monte Sant'urbano" Amarone della Valpolicella Classico is produced from three grape varieties are grown in the vineyard "Monte Sant'urbano" in the municipality of Fumane. The vineyard area of 19 hectares located at an altitude of between 280 and 350 metres above sea level on clayey-calcareous soils interspersed with rocks of volcanic origin, which helps retain moisture and prevents excessive dryness of the soil. The average age of the vines is 25 years. The grapes are harvested by hand from late September to mid-October vinification select the best cluster. Process begins to wilt, berries in 100 days takes place in special drying rooms ventilated with continuous monitoring of temperature and humidity. During the drying of grapes on average lose 42% of the weight. In January, the berries are crushed, are exempt from the ridges and fermented in stainless steel tanks at 16-18 °C for 35 days with periodic delestazhem. Vibrant wine has an elegant palate with a complex structure, velvety tannins, notes of ripe fruits and violets. The finish is persistent with hints of spices.
The wine is excellent with hot dishes, stews, red meat, game, seasoned cheeses.
