ECT! EST!! EST!!! — this unusual name of this wine from Lazio got back in the XII-th century. According to legend, Bishop Giovanni Deuk, who accompanied the Emperor Henry V in one of his trips to Italy, sent in the direction of Montefiascone ahead of the Royal train of his page Martino to the one heralded the arrival of the monarch and found the hotel serving a good wine. All these places Martino was noted with the inscription "Est!" on the door. However, the wine in Montefiascone was so great that one "Est!" for him wasn't enough, so page three wrote that word and put three exclamation points after the last of them.
