In the XVII century poet Francesco Redi, Vino Nobile di Montepulciano is considered the "king of all wines". The wine is made from selected berries and has good aging potential. Harvested by hand in small boxes. After separation from the stalks and soft pressing of the grapes is fermented in small oak barrels and steel that fill only three-quarters, at a controlled temperature of 28-30 °C for weeks. Then another 5-8 days maceration lasts. Wine aging in barrels for 18-24 months takes place in barrels of Slovenian and French oak volume 350-2000 liters. Before bottling the wine is, of necessity, passes a light filtration. Wine of intense ruby red color.
The wine is complex, rich flavor, which is dominated by hints of roses and violets, touches of dried cherry and berry jam. The bunch is also complemented by nuances of licorice and undertones of dried herbs.
Fresh, elegant and complex palate the wine shows soft, enveloping texture, a rich accord of fruity accents and spicy touches of vanilla and pepper, and a long tannic finish.
The wine will go perfectly with pasta and risotto with meat sauce, fried, stewed and grilled meat, hard cheeses.
